Pumpkin Soup

  • 1 onion, chopped
  • 2 cans Pumpkin
  • 1 qt Chicken Broth
  • 1 can Green Chiles
  • 1 can Black Beans, drained and rinsed
  • 1 package Chicken Strips, diced
  • 1/2 tsp Cumin – or to taste
  • Salt and Pepper, to taste

Saute onion until translucent. Add remaining ingredients and simmer until hot. Check for seasoning and add additional spices, salt and pepper, as desired.
