Cucumber Feta Salad

  • 1 cucumber, peeled and diced
  • 1/2 block Greek Feta, cubed
  • 2 tbsp White Balsamic Vinegar
  • 1/4 tsp Red Pepper Flakes – or more, to taste
  • Black pepper, to taste

Mix cucumber and cheese in medium bowl. Add crushed red pepper and balsamic and gently toss. Add freshly-ground black pepper, if desired.

**VARIATIONS:

Increase feta to one full block and add:

  • a chopped tomato
  • chopped bell pepper ot other fresh vegetable of your choice
  • any fresh herbs you may have on hand
